I was reintroduced to gelatin (I remember taking Knox packets when I was in high school to make my nails stronger) while doing some research into the healing properties of bone broth.  And I adore my bone broth.  So finally I ordered some high quality, grass fed gelatin to experiment with. WOW.  I started taking 1-2 T of gelatin 3x a day about 2 weeks ago and I can absolutely say that the progress in my healing has been greatly terms of energy, pain reduction, digestive ease, all around feeling a bit calmer, more capable.  CLEARER.  And each day for the past week especially I can actually feel that I'm getting stronger and stronger.

WHAT IS GELATIN | Gelatin is a flavorless, translucent substance derived from the processing of animal connective tissue and bones to extract collagen,  an insoluble fibrous protein.  It is derived by the selective hydrolysis of collagen from the skin, the connective tissue and/or bones of animals.  Once extracted and powdered, gelatin dissolves in hot liquids and becomes more solid as it cools.  Gelatin contains half of the 18 essential amino acids, needed for survival.

Humans used to eat tons of gelatin, as we would utilize the ENTIRE animal when cooking.  As Nutritional Researcher Ray Peat clarifies,

"When we eat animal proteins in the traditional ways (for example, eating fish head soup, as well as the muscles, or “head-cheese” as well as pork chops, and chicken-foot soup as well as drumsticks), we assimilate a large amount of glycine and gelatin. This whole-animal balance of amino acids supports all sorts of biological process, including a balanced growth of children's tissues and organs.

When only the muscle meats are eaten, the amino acid balance entering our blood stream is the same as that produced by extreme stress, when cortisol excess causes our muscles to be broken down to provide energy and material for repair.
